Banana – Buttermilk Muffin

Pertama kali tertengok kat bakery shop ada jual Buttermilk so hati teruja nak cuba...sbb sebelum ni dh cuba macam2 versi...ada letak yugourt , milk dan ini pertama kali cuba lina letak ikut recipe ada letak Buttermilk.....mmg hasil tidak mengecawakan..sesiapa yg mmg peminat muffin tu boleh la memcuba....recipe ni jugak lina ada tambah kan serbuk kayu manis satu sudu kecil.....

· 1 cup all-purpose flour ( i used SRF) · 3/4 cup whole wheat flour ( I used Oat) · 1/2 cup sugar (I use 1/4 cup sugar and 1/4 cup Splenda.) · 2 teaspoons baking powder · 1 teaspoon baking soda ( i didn't put ) · 1 cup low-fat buttermilk · 1 cup mashed ripe banana · 2 tablespoons canola oil · 1 large egg · 1 teaspoon vanilla · 1/2 cup chopped walnuts ) ( I put Chocolate chip and raising)
Directions: Prep Time: 15 mins Total Time: 35 mins 1. Preheat oven to 375°F. 2. Spray 12 regular muffin cups with non-stick cooking spray. 3. In a large bowl, mix together the flours, sugar, baking powder and baking soda. 4. In separate bowl, whisk together the buttermilk, mashed banana, oil, egg and vanilla. 5. Pour wet ingredients over dry ingredients and stir just until blended. 6. Spoon batter into muffin cups, filling about three-fourths full. 7. Sprinkle tops evenly with nuts. 8. Bake until lightly brown and a toothpick inserted in center comes out clean, approximately 15 to 20 minutes. 9. Allow to cool in pan on wire rack for 15 minutes, then turn out onto rack and cool completely. 10. These muffins freeze well and can be warmed in microwave.

ni la rupa muffin ..... Assalamualikum semua dan selamat pagi..... Semlm lina buat muffin lagi, biasanya lina akan buat muffin blueberry ikut recipe drp blog mamafami, izan, hana memories yg jauh itu, yatie di johor, kak nor, dayang jack, blog kak wan.....tp kali ni lina nak cuba guna shortening. alhamdulilah hasil nyer tak mengecewakan. Nak tahu apa itu shortening boleh click di sini. Kawan2 office suka.....Gambar terlupa nak bawa camera hari ini. nnt kalau freen lina upload kan gambar nyer....Tak sangka drp buat muffin dan cake hanya suka2 ramai pulak yg bekenan nak order. Tp ini semua bukan fokus utama lina.... Rasa mcm tak pecaya jer....... Sesiapa yg mengenali diri ini yg mmg kurang beminat utk kedapur.....tp lina rasa dengan membuat cookies, cake or muffin dh jadi terapy minda.....kalau dulu suka beli kasut, tp minat nak beli kasut dh mmg dh bekurangan. Jd kepada kawan2 yg tak minat memasak tu cuba bila kita dh berjaya buat sesuatu kita minat akan bertambah dr hari ke sehari. recipe ni lina ambil drp allrecipe. mai check apa ingredients yg di perlukan. Paper cup yang lina guna 2 inci jd jumlah muffin yg dpt hanya 10 psc sahaja. Note: Anak2 umi terutama alia mmg tak minat nak makan muffin lagi...tp adik still ok. ALia hanya minat nak tolong buat jer.
Ingredients 1/2 cup shortening 1 cup white sugar 1 teaspoon vanilla extract 2 eggs 2 cups all-purpose flour (lina used SRF) 2 teaspoons baking powder ( lina did'nt put ) 1/2 teaspoon salt 1/2 cup milk 1 pint blueberries 2 tablespoons white sugar (lina put chocolate chip)
Directions 1. Preheat oven to 450 degrees F (230 degrees C). Lightly grease 12 muffin cups. 2. In a large bowl, cream together shortening and 1 cup sugar. Beat in eggs and vanilla. Combine flour, baking powder and salt, and stir into egg mixture alternately with the milk. Fold in blueberries. Spoon batter into prepared muffin cups and sprinkle with sugar. 3. Bake in preheat oven for 5 minutes. Reduce heat to 375 degrees F (190 degrees C) and bake for 30 minutes more, until golden.

Marble Banana Muffin

Oleh kerana lama dah tak buat muffin since bulan puasa lagi...pagi ni our breakfast. Recipe ni biasa la ambil drp Izan....Terima Kasih ye izan share recipe ni dan kali kedua buat muffin ni....boleh click di sini utk tengok gambar nyer. Bahan: A 2 cawan tepung gandum 1 1/2 cawan gula kastor (saya guna cuma 1 cawan-itu pun masih manis) 1 sudu besar baking powder 1/2 sudu teh garam B 1 biji telur (L) 1 cawan susu segar 1/2 cawan minyak masak (mentega cair) 1 cawan pisang lecek kasar 1 sudu besar coklat paste (saya guna 1/2 sudu besar kopi paste + 1 sudu besar serbuk koko) Topping: Coklat chip/ Walnut/ apa apa yang disukai (saya Caranya: Ayakkan tepung bersama baking powder dan satukan semua bahan A ke dalam satu bekas. Ketepikan. Satukan telur, susu segar dan minyak dan gaul hingga sebati. Masukkan adunan susu segar tadi ke dalam bahan A dan gaul sebati. Jangan gaul terlalu lama, cukup sekadar bersatu dan masukkan pisang yang dilecek kasar tadi. Bahagikan 2 adunan, dan masukkan coklat paste ke dalam satu adunan. Kemudian cedokkan ke dalam muffin pan dan selang selikan untuk marble kan muffin. Bakar pada suhu 190 C selama 25 minit. 2 comments

Chocolate Chip banana Muffin

Alhamdulilah... Muffin yg baru dimasak lepas subuh tadi...sempat juga sebelum pergi kerja....letak almond...
Ni la hasil nyer....lama dh buat banana muffin ni...dh sampai office...sebelum mula kerja....
Here is the recipe 3 or 4 Large bananas, mashed (the more bananas the moister, so I use 5) 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet) 1 slightly beaten egg 1/3 cup melted margarine or butter 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1 1/2 cups flour (self raising flour my friend told me Tepung Gandung much much better when we make muffin) Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together! Pour into greased muffin tins, and bake in 170 degrees F oven for approximately 20 -25 minutes. Enjoy! *These are much more flavourful the next day, and they freeze very nicely too!*Also, if you like walnuts, you can throw a handful of those in there as well for some added flavor and texture, or adding chocolate chips, or better yet, BOTH! Yum

KIWI FRUIT MUFFINS

hi all,
i have no time to update...this my quick update on my last saturday baking session...huhu after this no more time to do this.... Thank to mamafami sharing this recipe with us.
1 cup all-purpose flour
1/2 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspiceDash salt
1 egg1/2 cup milk2 tablespoons butter or margarine, melted2 kiwifruit, peeled and chopped 1/2 cup raisins ( i put chocolate chip and almond)
Method :1. In a bowl, combine the dry ingredients.
2. In another bowl, beat the egg, milk and butter. Stir into dry ingredients just until moistened.
3. Fold in kiwi and raisins.
4. Fill paper-lined muffin cups three-fourths full.
5. Bake at 425 degrees F for 15-18 minutes or until a toothpick comes out clean.
6. Cool for 5 minutes before removing from pan to a wire rack.

Oat Chocolate Chip Muffin

Yesterday night, I have baked this Oat Chocolate Chip Muffin...as I wanted to give away to "Surau" some where in my house this morning. I have baked them double from the original recipe. I got this recipe from Pook blogs. Thank You very much sharing with us the health muffin.

Sorry Pooh I have change the name of your recipe to go well with my muffin that I bake...Hope that you don't mind. The taste of this muffin so good! Thanks for sharing this wonderful recipe :) Check it out the recipe: 150g ................................ Cake flour 20g .................................. Quick oats 1½ tsp ........................... Baking powder .......................................... a pinch of salt ( I didn’t put) 110g ................................. Golden caster sugar (I used caster sugar ) 2 ....................................... Eggs 110g ................................. Yogurt 60ml ................................ Vegetable oil (I used Butter ) 120g ................................. Frozen mixed berries ( I don’t have berries stock in my kitchen so I hv change it to chocolate chip) Preheat the oven to 200°C. Liner the tin with paper liner.

1. Sift flour and baking powder into medium bowl stir in oats, salt and sugar. Mix eggs, yogurt and oil together, then pour into the flour mixture, follow with berries, mix until just combine (don't over-mix).

2. Spoon batter into the prepared tins, bake for 20-25 minutes. Stand in tins for 5 minutes; turn, top-side up, onto wire rack to cool.

Banana Crumble cheese muffin

Ini kali kedua Banana version yg saya dah buat. Recipe tak byk beza nyer.kalau nak tengok pi tengok click kat sini ye. Untuk kali ni dpt ideal ni setelah pi ke blog hana ni mmg terkenal la bak memasak ni...apa jer ada kat dia...mmg boleh jadi sifu la kira nyer. Nak tahu lebilh detail boleh la ke blog HAna ni....sgt peramah org nye....kenal kat dlm cyber la kawan2....tak pernah jumpa pun...tp mmg baik la orang nyer. suka sgt..... Cikgu Hana....nnt dtg la buat spot check ye homework anak2 murid ni yer... Ni la rupa nyer gambar dr dekat.Nampak mampat sikit dan berat tp lembut di dlm nyer..ni kawan office yg cakap sedap...nnt kita buat lagi yerkk kawan2....Terima kasih la kawan yg sudi rasa....food testing ni...muffin lagi sedap kalau ada crumble nyer....tahu jerla ada anak kecil...ni tak sempat nak gentel...crumble....nyer tu itu. Mai kita tengok recipe nya pulak ye kawan2....Kawan yg malas nak nengok recipe dlm bahasa English ni dah ada Yg bahasa melayu....kalau tak buat gak..siap korang yerkkk....ari tu complaint...tulis dlm bahasa English. Jgn marah ye gurau jer...Mudah sgt nak buat nyer masa penyediaan nyer dlm lebih kurang 15 minute jer....ni tak termasuk bakar...masa bakar tu boleh buat kerja lain ye....

Bahan-bahan

  • 250g tepung gandum
  • 100g gula custor
  • 50g gula perang
  • 1/2 sk soda bikarbonat
  • 11/2 sk baking powder
  • 1/4 sk garam
  • 75g keju cheddar - cincang kasar
  • 300g pisang ambon atau apa2 pisang yg sesuai
  • 2 biji telur
  • 100g mentega - cairkan (hana kurangkan sket sbb agak oily)
  • 1/2 sk esen vanila

Untuk Crumb

  • 50g gula perang
  • 50g tepung gandum - ayak
  • 50 butter tanpa garam sejuk - potong dadu
  • 1/4 garam - jika menggunakan butter bergaram tak payah letak
  • 1/2 sk serbuk cinnamon

Cara-cara

  • Untuk Crumb - Campur gula perang, tepung, garam dan kayu manis. Kacau rata. Masukkan butter dan gentel2kan sehingga jadik serbuk crumbs. Simpan dalam esbok sehingga masa hendak dgunakan.
  • Panaskan oven suhu 200 selama 20min. Dalam mangkuk campur tepung, baking powder, garam, keju, gula custor dan gula perang. gaul rata dan ketepikan.
  • Mangkuk lain, lenyek pisang. Kemudian masukkan me ntega cair, telur dan esen vanila. Kacau menggunakan whisk sehingga sebati.
  • Tuang ke dalam campuran tepung tadi dan kacau rata menggunakan senduk kayu/spatula. Tak perlu over mix. Kacau asal sebati.
  • Tuang adunan ke dalam muffin cup sehingga 3/4 penuh. Taburkan crumbs dr peti sejuk tadi.
  • Bakar selama 25min. Keluarkan dr oven, biarkan 5 min baru keluarkan dari loyang/muffin tray.
  • Letak atas redai. Boleh hiaskan dengan hirisan pisang dan parutan coklat putih

Coffee Chocolate Chip Muffin

Dah beberapa minggu tak buat muffin..mood nak buat muffin dtg kembali setelah pergi ke blog hana dan arah..TerimaKasih berkongsi recipe....
Ni la hasil nyer
Ni recipe nyer dan cara2 dan nak buat...Selamat memcuba!
Bahan-bahan
  • 200g tepung gandum
  • 1 sk baking powder
  • 150g gula - hana kurangkan 110g sahaja
  • 1/2 sk esen vanila
  • 2 biji telur
  • 100g mentega
  • 100ml krim masam - Guna yogurt
  • 1 sudu besar serbuk coffee bancuh dengan 1 sb air panas
  • Choc chip secukupnyer - nih sy letak agak2 jer
Untuk Crumb
  • 50g gula perang ( saya guna gula merah Ok juga rasa nyer)
  • 50g tepung gandum - ayak
  • 50 butter tanpa garam sejuk - potong dadu
  • 1/4 garam - jika menggunakan butter bergaram tak payah letak
  • 1/2 sk serbuk cinnamon
Cara-cara
  1. Untuk Crumbs - Campur gula perang, tepung, garam dan kayu manis. Kacau rata. Masukkan butter dan gentel2kan sehingga jadik serbuk crumbs. Simpan dalam esbok sehingga saat hendak dgunakan.

  • Mangkuk lain, satukan mentega, krim@yogurt, pes coffee dan esen vanila dan telur (sy masuk kan sekali telur sbb hana tak mention)Ni agak2 jer. Kacau menggunakan whisk sehingga sebati. Tip drp Hana...wah ni sgt bagus tip ni..Terima kasih banyak2 ye.
  • Tuang ke dalam campuran tepung tadi dan kacau rata menggunakan senduk kayu/spatula. Tak perlu over mix. Kacau asal sebati.
  • Tuang adunan ke dalam muffin cup sehingga 3/4 penuh. Taburkan crumbs dr peti sejuk tadi. Jika suka, leh taburkan choc chips atau masukkan choc chips ke dalam adunan.
  • Bakar selama 25min. Keluarkan dr oven, biarkan 5 min baru keluarkan dari loyang/muffin tray.
  • Letak atas redai dan hidangkan hangat dengan secawan kopi.

Carrot Muffins

Carrot Muffins..let enjoy it.
My daughter and me made these yesterday and they are amazing. Very moist and full of flavor. We did change the amount of oil, by replacing 3/4 cups of apple sauce 1/4 cup oil and they turned out really well, while taking out a lot of that oil that was requested. I also put in 2 table spoons of ground flax seeds for more nutrition. I will be making these again and again

Ingredients: Make 36 muffins. 4 cups flour 4 teaspoons baking powder 1 teaspoon baking soda (bicarbonate of soda) 1/2 teaspoon salt 2 teaspoon cinnamon 4 eggs 1 1/3 cup dark brown sugar 2 cups milk 2 tablespoon lemon juice 6 oz olive oil 2 large finely shredded carrots (3 cups) 1 cup raisins Method: In a large bowl, mix flour, baking powder, baking soda, salt and cinnamon. In another bowl, whisk eggs and brown sugar until blended. Whisk in milk, lemon juice, and olive oil. Add the wet ingredients to the dry ingredients and stir until evenly moistened. Fold in carrots and raisins. Spoon batter into muffin cups, filling those three quarters full. Bake in the oven at 425 degree F for 18 minutes.

Vanilla Muffin

Soory la ye kawan asyik muffin jer kan since last week... kali ni muffin saya guna tepung gandung dan tanpa yogurt... rasa muffin ada beza rupa nyer apabila kita guna tepung naik sendiri...kalau kita guna tepung naik sendiri muffin lebih spongy..walau apa pun terpulang kepada citarasa masing2 ye. Tp saya sangat seronok buat muffin buat masa ni....lebih ni ada muffin lain lagi yg nak saya try...lg pun muffin sangat sesuai utk anak bawa bekal utk makan breasfast dan paling penting boleh dimakan oleh seisi keluarga. layan gambar muffin ni ye kawan2... recipe tak yah letak la...tp boleh refer kepada link ni Chocolate Chip Muffins Try ya kawan2...nnt bila dh try bagi tahu ye... :) sgt seronok.

Chocolate Chip Banana Muffins

The EASIEST and BEST Banana Muffins I have ever tasted! chewah...Even if you think you can’t cook, they are 100% “fool-proof” which makes them all that much better! With only 8 ingredients (which you probably have on-hand) I am sure you’ll agree these are super easy.

I found this recipe by google! Wow, these are the best I have ever made!! Not sure why as the ingredients are pretty much generic…but wow, they are fabulous! I actually used 5 bananas as that’s how many I had going too ripe.

Then I added half cup almond , and to top it off I added Sun flower seed

(I would said all my family members just love it very ..very much okay include my lil Darwisy!) I never said this version was for those watching calories! They are just wonderful!! I will NOT throw this recipe away!!

So mommy out there, what are you waiting for...bake it..enjoy doing it...to prepare this muffin it take 15 minute and plus minus bake about less than 35 minute in total...trust me....

Here is the recipe we could share it...

3 or 4 Large bananas, mashed (the more bananas the moister, so I use 5)

Orange Muffins Ingredients : 3 cups flour (i used self raising flour) 1 tablespoon baking powder 1/2 teaspoon bicarbonate soda 1/2 teaspoon salt 5 oz butter, softened 1 cup sugar 2 large eggs 1 1/2 cup plain yoghurt 1 teaspoon grated lemon peel 1 1/2 cups frozen blueberries (I didn't put) Method : 1. Preheat oven to 175C. 2. Whisk together the flour, baking powder, bicarbonate soda, salt and set aside. 3. In a large mixing bowl, cream butter and sugar together until fluffy. Add eggs one at a time. Mix in grated lemon peel. 4. Into the cream mixture, add the dry ingredients alternately with the yoghurt until just incorporated. 5. Fold in the berries. 6. Bake until muffins are golden brown, about 25 to 30 minutes. 7. Set on wire rack to cool for 5 minutes. Remove muffins from the tin and serve warm. 9 comments

Our menu for three of us Mee Goreng udang, Avocado juice and muffins...Alia,Darwisy and Kakak Tasha love it....lets see the recipe....enjoy baking mommy out there....
